- 390 g Cream
- 50 g Baileys *

- 82 g cane sugar *
- 60 g Dextrose *
- 41 g Dry glucose *
- 30 g Skimmed milk powder *
- 2 g Vanilla *
- 1 g Guar gum *
- 1 g Locust bean gum *
- 1 g Cocoa *
Instructions
Preparing the ice cream mixture
- Weigh out the dry ingredients and mix well. If any of the ingredients are lumpy, pass them through a sieve.82 g cane sugar, 60 g dextrose, 41 g dry glucose, 1 g guar gum, 1 g locust bean gum, 1 g cocoa
- Mix the liquid ingredients together with the vanilla pulp, the scraped-out vanilla pod and the half of the Baileys Pour into a saucepan. Heat slowly while stirring until the mixture is about to boil. Then continue stirring for a few minutes.390 g milk, 390 g cream, 2 g vanilla, 50 g Baileys
- Then stir in the dry ingredients with a whisk until everything is dissolved.
- Remove the pan from the heat and allow the ice cream mixture to cool slightly.
- Leave the ice cream mixture to infuse in the fridge for at least 1 hour or overnight.
Before or during the freezing process
- Switch on the ice cream maker and leave it to cool for a few minutes.
- Meanwhile, remove the vanilla pod, beat the ice cream mixture well again with a mixer and then start the freezing process.
- Before the ice cream is almost ready, add the remaining Baileys.

Which Baileys to use?
For your ice cream, you can use classic Baileys ( e.g. Baileys Original | I... from € 9.99 (€ 14.27 / l) )* or experiment with one of the many varieties (e.g. salted caramel or espresso).
Classic Baileys provides the typical cream liqueur taste - ideal if you like it traditional.
Special flavors add variety and give your ice cream an exciting touch.
Alcohol in ice cream - what to look out for?
Baileys contains alcohol, which lowers the freezing point. This makes the ice cream particularly soft and creamy - but too much Baileys can prevent it from becoming really firm. That's why we cook half of the Baileys to reduce the alcohol content.
If your ice cream is still too soft, heat more of the Baileys or extend the time on the stove. If it is too hard, you can also do without heating the alcohol.
Serving suggestions
A few chocolate shavings or a spoonful Caramel sauce add extra shine and flavor.
For a little crunch, you can top the ice cream with chopped nuts or crumbled cookies.
Or you can turn it into a dessert for adults: simply pour a hot espresso over it and serve like a Affogato enjoy.
