Cotton candy ice cream: icy fairground flair

This recipe combines two classic sweet treats: creamy milk ice cream and the taste of candy floss. The pale pink color underlines the typical fairground flair. Perfect for anyone who wants to conjure up an extraordinary dessert - whether as a highlight at the next summer party or simply as a treat for yourself.
The typical cotton candy taste is not created by sugar alone, but by the special production process and often also by added flavorings. When the sugar is heated and sprayed in the cotton candy machine, tiny sugar particles caramelize slightly, creating subtle roasted and caramel notes. Ingredients
- 180 g Cream
- 565 g Milk
- 82 g Cotton candy syrup *
Dry ingredients
- 60 g Dextrose *
- 42 g Dry glucose *
- 30 g Skimmed milk powder *
- 25 g cane sugar *
- 15 g Inulin *
- 1 g Guar gum *
- 1 g Locust bean gum *
Optional
- 20 g Glycerin *
- Food coloring, red
Instructions
Preparing the ice cream mixture
- Weigh out the listed dry ingredients and mix well. If any of the ingredients are lumpy, pass them through a sieve.60 g dextrose, 25 g cane sugar, 42 g dry glucose, 30 g skimmed milk powder, 15 g inulin, 1 g guar gum, 1 g locust bean gum
- Pour the cream and milk into a pan. Heat slowly while stirring until the mixture is just before boiling. Then continue stirring for a few minutes.565 g milk, 180 g cream
- Then stir in the dry ingredients with a whisk until everything is dissolved.

- Leave the ice cream mixture to infuse in the fridge for at least 1 hour or overnight.
Before or during the freezing process
- Switch on the ice cream maker and leave it to cool for a few minutes.
- Beat the ice cream mixture well again. Then start the freezing process.
- Optional: Shortly before the end of the freezing process, add glycerine to maintain the creaminess of the ice cream in the freezer compartment.20 g glycerine

Tips and tricks Cotton candy ice cream
- Opinions differ when it comes to cotton candy syrup and the various manufacturers. Some find the taste good, others find it too artificial. - Customize taste - The proportion of syrup can be varied depending on the intensity. It is better to start with a little less. If the flavor in the ice cream is too low, you can increase the amount of syrup. But then remember to reduce the amount of sugar.
- Food coloring for the look - If you want a strong pink, you can add a few drops of red food coloring. This makes the ice cream look even more like real candy floss.
